- 1 pound of cooked chicken
- 1 Tbsp. olive oil
- 2 onions, chopped
- 4 carrots, diced
- 3 Tbsp. flour
- 1/2 cup dry white wine
- 2 cups milk
- 10 ounce package of frozen peas
- 1 Tbsp.fresh thyme
- salt and pepper to taste
- 1 uncooked pie crust
- Heat oven to 400 degrees.
- Heat the olive oil in a saucepan over medium heat. Add the onions and carrots and cook until tender, 6-8 minutes. Sprinkle the flour over the vegetables and cook, stirring, for 1 more minute.
- Add the wine and cook until evaporated, about 5 minutes. Add the milk and simmer until the sauce thickens, 2-3 minutes. Stir in the chicken, peas, thyme, 3/4 tsp. of salt, and 1/4 tsp. of pepper. Transfer to a 1 1/2 to 2 quart baking dish.
- Place the crust on top, pressing to seal and cutting several vents in the top. Place the pot pie onto a baking sheet and bake until bubbling and the crust is golden, about 30-35 minutes.
