Chicken and Vegetable Pot Pie

Ingredients:

  • 1 pound of cooked chicken
  • 1 Tbsp. olive oil
  • 2 onions, chopped
  • 4 carrots, diced
  • 3 Tbsp. flour
  • 1/2 cup dry white wine
  • 2 cups milk
  • 10 ounce package of frozen peas
  • 1 Tbsp.fresh thyme
  • salt and pepper to taste
  • 1 uncooked pie crust
Steps:

  • Heat oven to 400 degrees.  
  • Heat the olive oil in a saucepan over medium heat.  Add the onions and carrots and cook until tender, 6-8 minutes.  Sprinkle the flour over the vegetables and cook, stirring, for 1 more minute.
  • Add the wine and cook until evaporated, about 5 minutes.  Add the milk and simmer until the sauce thickens, 2-3 minutes.  Stir in the chicken, peas, thyme, 3/4 tsp. of salt, and 1/4 tsp. of pepper.  Transfer to a 1 1/2 to 2 quart baking dish.
  • Place the crust on top, pressing to seal and cutting several vents in the top.  Place the pot pie onto a baking sheet and bake until bubbling and the crust is golden, about 30-35 minutes.

Irish Oatmeal (slow cooked/crockpot)

Ingredients:

  • 4 cups of water
  • 1 cup of Irish oats
  • 1/4 cup of dried fruit
  • dash of salt
Steps:

  • Spray the slow cooker/crock pot with oil, lightly coating the sides.  Combine all ingredients inside, giving a quick stir.  Set to low temperature and cook for 7-8 hours.

Hummus

Ingredients:

  • 6 cups of garbanzo beans (3 cans drained)
  • 3-4 Tbsp. tahini
  • 4-6 cloves of garlic, chopped
  • 1 lemon or lime
  • 1/3 cup of olive oil
  • salt and pepper to taste
  • water
Steps:

  • Saute the chopped garlic in the olive oil over a low flame; be careful to not burn.
  • Juice the lemon/lime.
  • Place all ingredients except water in a large blender/food processor.  Blend well, which could take several minutes.  The hummus will be thick and have a dry consistency.
  • Add water in about 1/8 cup amounts and blend until the desired consistency is achieved.  
  • Store in the refrigerator overnight and serve the next day with olive oil and paprika.

Sour Cream Pear Pie (or any other fruit)

Ingredients:

  • 1 cup of sour cream (or yogurt)
  • 1/3 cup of flour
  • 1 cup of granulated sugar
  • pinch of salt
  • 1 uncooked pie crust
  • 4 uncooked pears  (or other fruit like blueberries...)
Steps:

  • Preheat the oven to 425.
  • Slice the pears and place into the pie shell.  Mix all other ingredients and pour over the fruit.
  • Bake for 10 minutes at 425, then turn the oven down to 350 and bake for 40 minutes more.

Chocolate Chip Cookies


Ingredients:

  • 1 cup of butter, softened
  • 3/4 cup of brown sugar
  • 1/2 cup of granulated sugar
  • 1 egg
  • 1 tsp. vanilla
  • 2 1/2 cups of flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 cups of chocolate chips
Steps:

  1. Preheat oven to 375 degrees.
  2. Beat butter in a mixing bowl until fluffy.  Gradually add the ingredients in the order listed.  
  3. Bake for 8-10 minutes, then cool and enjoy!

Oatmeal Chocolate Chip Cookies ala Ghirardelli

Ingredients:

  • 1 cup of butter, softened

  • 1/8 tsp. nutmeg
  • 3 cups of oats
  • 2 cups of chocolate chips

  1. Preheat oven to 375 degrees.
  2. Beat butter in a mixing bowl until fluffy.  Gradually add the ingredients in the order listed.  
  3. Bake for 8-10 minutes, then cool and enjoy!
